Chicken and Pepper Penne

Ingredients
- 8 oz penne
- 1/4 cup olive oil
- 3 minced garlic cloves
- 1 tsp dried oregano leaves
- 1/4 tsp crushed red pepper flakes
- 6 italian plum tomatoes (quartered lengthwise)
- 1 green pepper (cut in thin strips)
- 1 red pepper (cut in thin strips)
- 1 yellow pepper (cut in thin strips)
- 4 boneless chicken breast (cut in bite size pieces)
- 1 cup mozzarella cheese

Preparation
Step 1
Cook penne, preheat to 450 degrees. Coat pan with non-stick spray. In small bowl combine oil, garlic, oregano and red pepper and mix well. combine tomatoes and peppers and coat with 1 Tbs of the oil mixture. Just enough to coat. Bake 10-12 minutes until crisp and tender, lightly brown.
In skillet add 2 Tbs oil mixture and chicken. Sprinkle with salt and pepper and cook. Put penne in bowl and add oil mixture, vegetables, chicken and cheese and toss gently.
