Chow Mein

A delicious dinner that is as good as takeout!

Ingredients

  • 1/2 lb. angel hair pasta
  • 3 T. hoisin sauce
  • 1/4 cup chicken broth
  • 2 T. soy sauce
  • 2 tsp. sesame oil
  • 1 tsp. corn starch
  • 2 T. vegetable oil
  • 1 T. finely chopped ginger
  • 1 medium onion cut in thin slices
  • 5 shitakke mushroom caps thinly sliced
  • 1/2 cup thin sliced carrots
  • 1 cup broccoli
  • 1 cup sugar snap peas
  • 1 can Chinese corn
  • 1 lb. chicken breast cut in strips

Preparation

Step 1

Rinse noodles with cold water and set aside.

In a bowl, mix hoisin, broth, soy sauce, sesame oil and corn starch. Set aside.

Heat 1 T. oil in wok. Stir fry ginger 30 seconds. Add onion and stir fry 2 minutes. Add mushrooms and carrots and stir fry 2 minutes. Add broccoil, pea pods and corn and stir fry 2 minutes.

Heat 1 T. oil in another pan. Add chicken and stir fry 4 minutes. Add noodles, vegetables, and sauce. Turn to medium heat.

Toss mixture until heated through--3 minutes more.
