  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup sifted cake flour
  • confectioner's sugar
  • jelly

Step 1

Place baking powder, salt, and eggs in a large mixer bowl and beat until mixture begins to thicken. Add sugar gradually and continue beating until the mixture becomes thick and lemon colored. Add vanilla and fold in flour (do not beat). Pour batter into a greased and waxed paper lined 15x10x1 1/2 jelly roll pan. Bake at 400 F for 13 to 15 minutes.

Sprinkle tea towel with a coating of confectioner's sugar. Turn cake on towel, peel off waxed paper, and roll towel and cake up tightly. Let cool about 10 minutes, unroll carefully, and spread jelly onto cake. Roll cake again, wrap in towel, and cool on rack.
