Ingredients

  • Dressing:
  • 2 15 oz can black beans, rinsed
  • 2 15 oz cans pinto beans, rinsed
  • 2 15 oz cans white corn, rinsed
  • 1 4 oz can chpd green chilis,undrained
  • 2 jalapeno peppers, seeded and finely chopped
  • 1 red bell pepper, chopped finely
  • 1 green pepper, chopped finely
  • 1 small red onion, chopped finely
  • 1 bunch cilantro, chopped finely
  • 1/2 cup rice vinegar
  • 1/2 cup olive oil
  • 1/3 cup sugar
  • 1/2 tsp garlic powder

Step 1

Mix beans, corn, chiles, peppers, onion and cilantro in a large bowl. To make dressing, stir the vinegar, oil, sugar, garlic powder in small pan. Bring to a boil and remove from heat to cool, make sugar dissolves. Pour dressing over bean mixture and toss. Refrigerate until serving. It gets better once the flavors have a chance to mix together.
