Easy Banana Bread
Here is a really nice banana bread recipe. I use apple sauce and oil rather than all oil to cut down on fat. You can also add some chocolate chips to the batter, which I did for the pictured bread. All I can say is watch your fingers because you may get them bitten off in the rush to get to the bread. It is wonderful!

Ingredients
- 2 eggs beaten
- 1/3 c buttermilk (you can use 1 cup milk and 1 tsp lemon juice)
- 1/2 c applesauce and oil (2 Tbsp oil and the rest applesauce)
- 1 c mashed bananas (3 bananas)
- 1 tsp vanilla
- 3/4 c white sugar
- 1/2 c brown sugar
- 1 tsp cinnamon
- 1 3/4 c all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 c chopped nuts (optional)
- 1/2 c chocolate chips (optional)
Preparation
Step 1
Preheat oven to 350. Grease a large loaf pan. In a large bowl, beat eggs. Add milk, applesauce, oil and vanilla. Mix the rest of the ingredients in a small bowl and then add to the wet mix. Bake 50 minutes to 1 hour. Loaf is done when center is set and toothpick comes out clean.
