Carrot Timbale

Ingredients

  • 2 lbs. Carrots
  • 2 cups Water
  • 3/4 tsp Salt
  • 2 Eggs, large
  • 2 cups Sharp Cheddar Cheese, grated
  • 1/4 tsp Salt
  • 1/4 tsp White Pepper
  • 1/3 cup Bread Crumbs
  • Parsley, chopped

Preparation

Step 1

Preheat oven to 350 degrees.

Peel carrots, cut in pieces and simmer in salted water until tender. Drain and discard water. Mash carrots. (can be done in processor.)

Combine mashed carrots with beaten eggs, cheese, salt and pepper.

Pour into greased 8x11-inch baking dish. If desired, may sprinkle with bread crumbs. Bake, Uncovered, 20-30 minutes until firm but not browned. Sprinkle with fresh chopped parsley before serving.
