Homemade Egg Noodles

Ingredients

  • 2 cups Flour
  • 1/4 tsp Salt
  • 1/4 tsp Baking Powder
  • 4 Egg Yolks
  • 1/2 cup Water, approx.

Preparation

Step 1

In a medium sized bowl, mix the flour, salt and baking powder.

In a small bowl, crack 4 eggs and place yolks in bowl. Stir with a fork until well blended.

Make a well in the flour mixture and pour the yolks into that well. With a fork, start lightly stirring, incorporating the yolks into the flour until well mixed. Don't over mix.

Make another well in this mixture and pour half of the water into well. With a fork, start mixing, adding more of the liquid, as needed, until the mixture starts to come together.

Gather up the dough with your hands and make a ball. Knead the dough a few times, until it looks well blended. Don't over mix.

Cut the dough into quarters, cover with a piece of plastic wrap or a towel and let rest for a few minutes.

Lightly flour your work surface and start rolling out one portion of your dough. Lift it up and add more flour to your work surface and continue rolling on the other side. Roll out to your desired thickness.

Roll your portions of dough, cinnamon roll style, and cut to your desired size with a sharp knife. Lay out on a towel or parchment lined baking sheet to dry. Dry for several hours, rotating the noodles several times to ensure even drying.

At this point, the noodles can be used or they can be wrapped and placed in the refrigerator or freezer to be used later.
