Ingredients
- 2 pounds lean beef
- 2 tablespoons olive oil - (to 3 tbspns)
- 2 garlic cloves crushed
- 2 bay leaves
- 1 tablespoon wine vinegar
- 4 ounces good-quality red wine
- Salt to taste
- Freshly-ground black pepper to taste
- Water as needed
- 2 cans boiled small white onions - (12 oz ea)
- Hot cooked rice
Preparation
Step 1
Saute the beef in olive oil. Add garlic, bay leaves, wine vinegar, wine and salt and pepper. Add enough water to cover. Cover and simmer for 1 1/2 to 2 hours, add more water, if necessary. When stew is ready to serve, add the onions and heat thoroughly. Serve over rice.
This recipe yields 4 to 6 servings.
