Banana Bread

A recipe given to me from my hygienist Shirley who makes this as gifts to give at Christmas. When asked how she acquired it she told me it was on the back of soap opera digest. A recipe from Brooke of All My Children.

Ingredients

• 1/2 c butter
• 1 1/2 c sugar
• 1 1/2 c flour
• 1/4 tsp salt
• 1 tsp baking soda
• 2 eggs - room temp
• 3 ripe bananas
• small bananas are good. Can peel and freeze in ziplock bag, thaw
• and freeze prior to using.
• 1 tsp vanilla

Preparation

Step 1

Cream butter and sugar, set aside. Use of mixer ok
Mix flour, salt and baking soda with whisk.
Mash bananas with fork.
Add flour mixture gradually to sugar mixture, then add egg, mashed
banana and vanilla.
Best to mix by hand, don't over mix.

Grease loaf pan with shortening and flour. *don't use spray

Bake 350 for 1 hour.
Don't open oven prior to hour. Sometimes need a little more than an
hour.
