Perfect Corned Beef Brisket

Ingredients

  • 4 pound Corned Beef, point or flat cut
  • 2 onions, quartered
  • 1/2 head cabbage, cut into wedges
  • 2 cups baby carrots
  • pickling spice
  • black pepper

Preparation

Step 1

Thoroughly rinse brisket and pat dry.
Place onions and cabbage in crock pot.
Lay corned beef, fat cap side up on top of onions.
Sprinkle with pickling spices and pepper.
Cook on high hear for 1 1/2 hours, reduce heat to low and cook for 4 - 5 hours more until brisket is fork tender.
Add no additional liquid.
Toss in some carrots and potatoes halfway through cooking time if desired.
Remove brisket when tender. Allow to rest for 15 - 20 minutes. Slice ACROSS the grain of the meat.
