Ingredients

  • 12 ounces light soft silken tofu
  • 2 large ripe bananas
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons light brown sugar
  • 1 teaspoon cherry or raspberry vinegar
  • 5.3-ounce bar of 70 percent dark chocolate

Step 1

1. In a blender, combine the tofu and banana until smooth.
2. Add the vanilla, sugar, and vinegar. Blend until evenly combined.
3. Melt the chocolate in a double boiler, or very carefully in microwave on low power. To create a double boiler, fill a medium-size pot with 3 cups of water. Bring water to a simmer over medium heat. Place chocolate in a heat-safe bowl and put the bowl over the pot of water. Do not let the bowl touch the hot water. With a wooden spoon, stir the chocolate until melted.
4. Pour the melted chocolate into the blender. Puree the mixture until smooth. Adjust sugar as desired.
5. Transfer the mousse into a container or 1/2-cup individual serving dishes. Cover tightly with plastic wrap. Chill for 2 hours before serving.
