Ingredients
- 1 tsp olive oil
- 4 oz pancetta, sliced 1/8 inch thick and cut into strips
- 1 red onion, chopped
- 1/2 tsp red pepper flakes
- 1 can (28 oz) peeled plum tomatoes, chopped
- 1/2 tsp salt
Preparation
Step 1
Heat oil in a heavy medium pot over medium. Cook pancetta, stirring often, until golden, 8 minutes. Add onion and red pepper flakes, and cook until tender while stirring, 10-12 minutes. Stir in chopped tomatoes and juice, and add salt.
simmer gently, stirring, until sauce is thick, about 25 minutes.
