Ingredients
- 1/2 c. dried cranberries
- 1 tsp curry powder
- 2 c. chicken broth
- 1 c. couscous
- 2 (16oz) grilled chicken breast, cubed
- 1/4 c. pine nuts
- 4 tbs chopped parsley
Preparation
Step 1
Combine dried cranberries, curry powder and chicken broth. Bring to simmer. Add couscous. Cover, remove from heat and steam for 10 minutes. Add cubed grilled skinless chicken breast, pine nuts and parsley. Toss.
