Irish Soda Bread

Ingredients
- 2 cups all-purpose flour
- 2 tablespoon brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 tablespoon cold butter
- 2 large eggs, divided
- ¾ cup buttermilk
- 1/3 cup raisins or other dried fruits

Step 1
Preheat oven to 375degF
In large bowl, combine four, brown sugar, baking powder, baking soda and salt. Whisk dry ingredients together.
Cut in butter
In separate bowl, whisk together the egg and buttermilk. Then pour into flour mixture. Stir until just combined. [do not over work the dough, will make it tough and dense]
Turn out the dough on a lightly floured surface. Gently knead by carefully folding the dough 6-8 times. Shape into a round loaf by pushing your hands underneath the lump of dough.
Transfer the dough to greased baking sheet, use a sharp knife to cut shallow X on top.
To give bread shine, add egg wash by beating remaining egg in a small bowl, gently brush over the loaf.
Bake fir 30-35 mins or until golden brown. Remove from sheet and cool on a wire rack.
