Greek Roasted Chicken

Ingredients
- 3 - 4 # organic whole chicken
- 1/2 of a lemon
- 6 large garlic cloves, peeled
- 1 medium sized Vidalia onion, cut into chunks
- handful flat leaf parsley
- kosher salt
- fresh ground pepper
- dried oregano
- dried thyme
- garlic powder
- 6 slices day old crusty bread

Preparation
Step 1
Preheat oven to 350.
Line the bottom of a roasting pan with bread.
Rinse the chicken and pat it dry.
Place the chicken in the pan, and squeeze half of a lemon over the entire chicken. Place the used lemon half inside the cavity of the chicken, along with the garlic cloves, onion and parsley.
Sprinkle the underside of the bird with salt, pepper, oregano, thyme and garlic powder. Flip the bird over, and repeat on the breast side.
Tie the legs together with twine and place in the oven to roast for about 1 hour and 30 minutes, or until the internal temperature reaches 180 degrees. Allow the chicken to rest at room temperature for fifteen minutes before carving.
