Ingredients

  • PASTRY:
  • 7 tbsp. butter, softened
  • 7 tbsp. sugar
  • 1 egg
  • 1 1/2 cup flour
  • 1 tsp. baking powder
  • FILLING:
  • 1 cup light sour cream
  • 1 egg
  • 2 tsp. vanilla
  • 1/2 cup sugar
  • 1 lb. (3 cups+) blueberries OR mixed berries
  • 2 tbsp. cornstarch

Preparation

Step 1

PASTRY: Using an electric mixer, beat butter and sugar until light and creamy. Whisk in egg.
Mix flour and baking powder together and stir into the dough.
Place dough in a greased 9" tart pan or pie plate and flatten on the bottom and sides using your
fingers (add a bit of flour if the dough is too sticky to handle.
FILLING: Mix the berries with the cornstarch, then place berries in the prepared crust.
Mix together the sour cream, egg, vanilla and sugar and spoon the filling on top of the berries.
Bake at 350 oven for about 30 min., or until the pastry has browned and the filling seems set.
