Ingredients

  • 2/3-cup butter
  • 1/2-cup flour
  • 1-Lb. sliced okra (freash or frozen).
  • 1-cup sliced onion
  • 1-cup sliced carrot
  • 1-cup sliced celery
  • 1-cup sliced bell pepper
  • 2-Tbs. garlic
  • 8-cups of beef broth
  • 28-oz. diced tomatoes
  • 2 -Tps. cayenne pepper. (less for mild)
  • 2 -bay leaves
  • 1-Lb. shrimp. (if desired)
  • 3-cups of chopped chicken
  • 2-cups of smoked sausage
  • 2-Tbs. parsely
  • 2-cups of rue from the flour & butter

Preparation

Step 1

Melt the butter in a sauce pan stirring in flour making the rue. Cook till rue comes to a dark color.
Slice okra and brown in a sauce pan with a little butter.
Put beef broth in a large pot and start heating on medium heat.
Slice onion, carrots. celery and bell pepper and add to pot. Add 28 oz. diced tomatoes, bay leaves and cayenne pepper to pot.
Brown 1 Lb. shrimp in olive oil till done.
Cook three chicken breats and chop up three cups worth. Chop up 2 cups smoke sausage.
Add chicken, smoke sausage and shrimp if desired to pot. Stir in 2 Tbs. parsely and the 2 cups of rue.
Simmer 45 to 60 minutes until all vegetables are soft and done.
Serve while hot with bread sticks.
