Ingredients

  • 2 slices whole wheat bread
  • 1 tablespoon plus 1 teaspoon olive oil
  • Salt and pepper, to taste
  • 12 ounces whole wheat Spaghetti pasta
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons fresh lemon juice
  • 1/2 cup chopped parsley
  • 2 tablespoons slivered Kalamata olives
  • 1 (12-oz.) can chunk light tuna in water, drained

Preparation

Step 1

Preheat oven to 350 degrees. Bring a large pot of water to a boil. Meanwhile, in a food processor, pulse bread and 1 teaspoon oil until coarse crumbs form. Spread on a baking sheet; season with salt and pepper. Bake for 6 to 8 minutes or until golden, tossing occasionally. Meanwhile, cook pasta in boiling water until al dente. Reserve 1/2 cup of pasta cooking water; drain pasta and return it to the pot. Add lemon zest, lemon juice, parsley, olives and 1 tablespoon of oil; toss, adding enough pasta water to coat. Add tuna; toss gently. Serve sprinkled with breadcrumbs.

SERVING SUGGESTION: Serve a big salad on the side.
GLUTEN FREE: Use gluten free bread and spaghetti. Make sure olives and tuna are gluten free.
