Ingredients
- 1 T oil
- 1/2 cup minced onion
- 5 cups shredded potatoes
- 2 beaten eggs
- 2 green onions chopped
- 1/4 cup chopped fresh parsley
- 2 T flour
- 2/4 t salt
- 1/8 t pepper
- 1/4 cup sour cream
- and chopped chives or green onions for garnish
Preparation
Step 1
Preheat oven to 400 degrees. in small skillet heat oil and cook onions. Coak 24 ini muffin cups with cooking spray. Combine ingredients thoroughly and divide among cups - about 2 to 2 1/2 T per cup. Coat top with cooking spray.
Bake 10 minutes. Use spatula to loosen around edges and lift out of pan. Add garnish.
