Skillet Fried Corn

One of our families favorite side dishes - fried corn with chopped bacon, onions and bell peppers with salt and pepper. Simple and delicious!

Ingredients

  • 8 ounces bacon, chopped
  • 1 onion, chopped
  • 2 medium green bell peppers, chopped
  • 2 (16-ounce) packages frozen corn
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Preparation

Step 1

Cook bacon in a large deep skillet over medium high heat until evenly brown but soft, about 5 minutes. Drain, reserving drippings.

Return bacon and 1/3 cup drippings to skillet. Add onion and bell peppers, and cook, stirring occasionally, until tender about 10 minutes.

Reduce heat to medium. Stir in frozen corn, salt and pepper, and cook, stirring occasionally, until corn is heated through and tender, about 15 minutes.
