White Asparagus With Black Garlic Vinaigrette

White asparagus has a nice mild sweetness that is enhanced by the black garlic. Black garlic is garlic that has been aged & fermented. It is soft & sweet but still has a slightly garlicky flavor.
Ingredients
- For The Vinaigrette:
- 5 Cloves Black Garlic
- 1/4 C. White Balsamic Vinegar
- 1 tsp. Dijon Mustard
- 1/2 tsp. Kosher Salt
- 1/2 tsp. Sugar
- 1/4 tsp. Freshly Ground Black Pepper
- 3/4 C. Extra Virgin Olive Oil
- For The Rest Of The Dish:
- 1 lb. White Asparagus, washed & trimmed
- 1/2 C. Toasted Walnut Pieces
- 2 tsp. Fresh Thyme Leaves
Preparation
Step 1
To make vinaigrette, put all of the ingredients except the olive oil in the bowl of a food processor or blender. Process the ingredients till the black garlic has been completely incorporated with the rest of the ingredients. With the food processor running, slowly add the olive oil, blending till the dressing has thickened. Adjust seasonings to taste, then set aside. Bring a lg. pot of water to a boil. Immerse the asparagus & blanch for 1 min. Remove the asparagus from the hot water & run under cold water to stop the cooking process. Dry the asparagus & arrange on a plate. Drizzle the vinaigrette over the asparagus, then sprinkle the walnut pieces & fresh thyme leaves overtop & serve.
