SWEET AND SAVORY GROUND CHICKEN PENNE

Ingredients

  • 3 cups uncooked penne
  • 1 medium onion-diced
  • 3 cloves garlic-minced
  • 1 green pepper -cut into 1" chunks
  • 1 carrot- peeled and cut into 2"long sticks
  • 1 lb lean ground chicken
  • SAUCE
  • 14 oz diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup orange juice
  • 1/4 cup ketchup or tomato paste
  • 1/2 tsp chili powder
  • 1 tbsp vinegar
  • 1/2 tsp ground sage
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • salt and pepper to taste
  • to thicken sauce
  • 1 tbsp corn starch
  • 2 tbsp water

Preparation

Step 1

In a large pot, cook penne.
Cook onions and garlic in a large skillet until soft.
Add carrots and peppers and cook for 5 minutes.
Add ground chicken and cook until meat is no longer pink.
Add all sauce ingredients, bring to a boil and then turn down to simmer for 10-15 minutes
Thicken with cornstarch/water mixture.
Serve over penne.
