Ingredients

  • Rub:
  • 1 28 ounce can tomatoes
  • 3 garlic cloves, crushed
  • 1 large red onion cut into wedges
  • 2 chipotle peppers from a can of chipotle peppers in adobo sauce
  • Juice of one lime
  • 3 1/2 lb pork shoulder roast
  • 2 tsp chili powder
  • 2 tsp cumin
  • 2 tsp ground oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Step 1

Put first 5 ingredients in crockpot. Combine rub ingredients, rub onto roast and then lay rost in crockpot, fat side up. Cook on low for 8 hours. Remove roast to a shallow pan to cool, and shred with forks. Allow braising liquid to cool, remove fat from top, and pour 1-2 cups of liquid back onto meat. Serve with tortillas, your favorite cheeses, shredded cabbage, guacamole and sour cream.
