Ingredients

  • 1 lb minced turkey
  • 3 ripe plantains
  • 1/2 one large red bell pepper, diced
  • 1/2 one large green bell pepper, diced
  • 1/2 cup chopped onion
  • 1 scallion, chopped
  • 1/2 tbs red pepper flakes
  • Salt and pepper to taste
  • 1/4 tbs nutmeg
  • 1/3 tsp garlic powder
  • 1/4 cup corn
  • 1 bay leaf
  • Cheese

Preparation

Step 1

Heat oven to 350 degrees
Wash and dry plantains
Cut off ends of plantains and peel
Cut slits from one end to the other end (do not slit right through to the other side)
Place plantains in baking sheet and bake for 35 minutes
Remove from oven and set aside

Heat oil in pan and add onions and scallions and cook until onions are translucent
Add minced turkey, stir and taking out any clumps from meat.
Cook for 5 - 6 minutes, stirring occasionally
Add bell peppers, corn
Add nutmeg, bay leaf, red pepper flakes, garlic powder and salt and pepper to taste
Cook until meat is tender and liquid has evaporated

Add meat to cavity in plantains
Cover with cheese and bake till cheese is melted
Serve
