Ingredients

  • Ham Hock
  • Bacon, cooked, save fat to salute veggies
  • 1 qt. Chicken stock
  • 2 1/2 cups water
  • 1 lb. dried split peas
  • 2 tbsp. butter
  • 1/2 onion, diced
  • 2 ribs celery, diced
  • 2 carrots, diced
  • 1 lb. ham, diced
  • 1 tbsp. brown sugar
  • 3 cloves garlic, sliced
  • 1/2 cup white wine
  • salt and ground black pepper to taste
  • lemon juice
  • 1 bay leaf
  • Spices (easy) - marjoram,rosemary,parsley, nutmeg,

Step 1

Place ham hock, bacon, chicken stock and water into large pan, cover and bring to a boil, reduce heat to low. Simmer for 1 hour, stir occasionally. Add peas, simmer for another hour. Saute veggies and garlic in bacon drippings and butter, add ham. Add this to sauce. Add brown sugar, pepper, salt and other spices. Simmer until peas are softened, about 1 hour.
