Ingredients
- 1 Tbsp canola oil
- 2 Tbsp sesame oil
- 12oz boned and skinned chicken breast, cut into thin strips
- 1 small carrot, sliced
- 1/3 small red onion, cut into small chunks
- 2 cups cauliflower, cut into bite size pieces
- 6oz button mushrooms, sliced
- 1 2/3 cup broccoli florets, cut into bite size pieces
- 1/4 small yellow pepper, cored, seeded, and cut into strips
- 1/4 small red pepper, cored, seeded, and cut into strips
- 1 baby bok choy sliced
- 1 small zucchini sliced
- 6-9 garlic cloves, crushed
- 1 Tbsp fresh ginger, finely grated
- 4 Tbsp sot sauce
- 1 cup snow peas, trimmed and tipped
- 2 cups bean sprouts
- 3/4 cup canned water chestnuts sliced
- 1/2lb noodles
- 8 cups chicken stock
- 3-4 greens of scallions, sliced thinly
Preparation
Step 1
Heat a lot over meadium heat
Add oils and then chicken
Cook for 1 minute, stirring constantly
Add once at a time waiting a minute in between
Add carrot, onion, cauliflower, mushrooms, broccoli, peppers, bok choy and zucchini
After another minute add garlic and ginger
Cook for 30 seconds add the garlic and ginger
Cook for 30 seconds snd then add the soy sauce
Cook another minute and then add snow peas, bean spirit, and water chestnuts
Cook for another 2 minutes
add the cooked noodles
Toss to incorporate noodles and get coated
Add the heated chicken stock
Let everything simmer for 2 minutes
