Enchiladas

What's for dinner?! Quick and simple weeknight Enchiladas. Rolled flour tortillas stuffed with ground beef and onions smothered in enchilada sauce and melted cheese. Serve with a dollop of sour cream and side of rice and simple salad.
Ingredients
- 1 1/2 pounds ground beef
- 2 cups colby Jack cheese
- 2 cans enchilada sauce
- 10 flour tortillas
- Garlic, to taste
- Onion, to taste
- Salt and pepeer totaste
- Sour cream

Preparation
Step 1
Brown the ground beef, season with salt, pepper, garlic & onion. When done add 3/4 can of enchilada sauce and 1 cup cheese.
Take 1/2 can of enchilada sauce and put in the bottom of a 9x13 pan.
Put a scoop of meat mixture onto a tortilla and roll up and put in the prepared 9x13 pan. Continue to do this until all the mixture is used. Top with the remaining enchilada sauce and top with the remaining cheese.
Cover with foil and bake @ 350* for 25-30 minutes. Remove the foil and continue to bake for 5-8 minutes. Serve with sour cream.
