BANANA PUDDING

Ingredients

  • 2 cups milk
  • 2 egg yolks
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 2 cups milk

Preparation

Step 1

Beat the egg yolks and add the milk, sugar, salt and flour. Cook until thick. Remove from heat and add the butter and vanilla.

In a baking dish alternate layers of cookies, bananas and the filling or stir in approximately 3 sliced bananas, vanilla wafers and filling.

Beat the 2 egg whites with 1/2 teaspoon vanilla and 1/4 teaspoon cream of tartar till soft peaks form. Gradually add 4 tablespoons sugar, one at a time, beating till stiff and glossy peaks form and all sugar is dissolved. Spread meringue over hot filling and bake at 350deg for 12 to 15 minutes or until meringue is golden.
