  • 4 (5 to 6 pieces cod fillets) 3/4 to 1 inch thick
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • Garnish: lemon wedges:chopped fresh flat-leaf parsley

Preparation

Step 1

Pat fish dry and sprinkle with salt and pepper.

Heat butter and oil in a 10 to 12 inch nonstick skillet over moderately high heat until foam subsides, then saute fish, turning over once, until browned and just cooked through, 6 to 8 minutes total.

Serve fish with favorite fish sauce over rice or by itself
