Ingredients

  • 1 cup cut-up prunes
  • 1 teaspoon baking soda
  • 1/2 cup melted butter
  • 1 cup boiling water
  • 1 egg
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • Coconut-sugar topping

Preparation

Step 1

In a large mixing bowl, mix prunes with soda. Add melted butter and boiling water. Set aside to cool. Beat egg well and mix in sugar and vanilla; add to cooled prune mixture. Mix well. Turn into a buttered 9-inch square baking pan. Bake in a 350deg oven for 25 to 30 minutes. Spread gently with Coconut-sugar topping, and bake 10 to 15 minutes more or until topping is golden brown.

COCONUT-SUGAR TOPPING:
In a small saucepan, melt 3 tablespoons butter. Stir in 3 tablespoons heavy cream, 1 cup shredded or flaked coconut, and 1 cup brown sugar, firmly packed.
