HEAVENLY PINEAPPLE CAKE

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 cups milk
  • 3 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt

Preparation

Step 1

Separate eggs and beat yolks and whites separately. Cream butter and sugar, add beaten egg yolks. Mix salt, flour and baking powder and sift together. Add flour mixture and milk alternately to the butter mixture; fold in stiffly beaten egg whites. Bake in three cake pans for 30 to 40 minutes at 400deg.

FILLING:
Drain large can crushed pineapple and add 1 cup sugar, 2 tablespoons flour and 2 tablespoons butter to the juice. Cook until thick and add pineapple pulp and spread on hot cakes.
