Ingredients
- 1/4 c. oil
- 2 lg sweet red bell peppers, chopped
- 2 lg sweet yellow bell peppers, chopped
- 1 med. potato, diced
- 1 onion, chopped
- 1/2 tsp salt
- 1 1/2 c. chicken broth
- Garnish with sour cream and dill
Preparation
Step 1
Sauté peppers, onions and potato in oil. Add broth and salt simmer until veggies are soft. Blend with immersion blender until desired smoothness. Garnish with sour cream and dill.
