Ingredients

  • Non-aerosol cooking spray
  • 1/4 cup chopped parsley
  • 1 clove garlic, pressed
  • 1/4 teaspoon dried rosemary, crushed
  • 1 teaspoon coarsely chopped lemon zest
  • 4 (4-oz.) boneless skinless turkey breast cutlets
  • 4 roasted red pepper slices
  • 1/2 cup shredded part-skim Mozzarella cheese
  • Wax paper
  • Wooden toothpicks

Preparation

Step 1

Preheat oven to 400 degrees. Spray the rack of a broiler pan with cooking spray. In a small bowl, combine parsley, garlic, crushed rosemary and lemon zest. Layer turkey cutlets between 2 sheets of wax paper; pound gently to flatten slightly. Remove wax paper. Rub each piece of turkey evenly with parsley mixture and place 1 roasted red pepper slice on top; sprinkle evenly with cheese. Roll up gently from the wide end; secure the rolls with toothpicks. Place turkey rolls on a broiler rack, seam side down; bake until cooked through, about 20 minutes.

LC SERVING SUGGESTION: Steamed broccoli and Faux-Tay-Toes (steam cauliflower till tender; drain; mash with butter, cream cheese and salt and pepper to taste till you get a mashed potatoes texture).
SERVING SUGGESTION: Serve baked sweet potatoes instead of Faux-Tay-Toes.
KOSHER: Use soy cheese.
