Ingredients
- 4 medium squash, grated (about 2 cups)
- 1 onion, chopped
- 2 eggs, beaten
- 3 T. all-purpose flour
- 4 T. self-rising cornmeal
- 2 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. baking powder
- Sprinkle of Cajun Seasoning (optional)
- 2 T. butter
- vegetable oil
Preparation
Step 1
Grate squash and add next 9 ingredients.
Heat skillet to medium heat, add 2 T. vegetable oil and the butter; let butter melt.
Drop squash mixture by spoon into hot skillet; cook about 3-5 minutes per side until browned.
Delicious!
***equally good with zucchini!
