Ingredients
- 4 Lbs sweet potatoes (about 7 small-medium), peeled and cut into 1" cubes
- 2 Tsp salt, divided
- 1/3 Cup finely sliced green onions
- 1/3 Cup finely chopped fresh parsley
- 1 Clove garlic, smashed
- 1/4 Cup sour cream
- 3 Tbsp butter, cubed
- Fresh ground black pepper
- 1 Tsp olive oil

Step 1
-Place the cubed sweet potatoes in a large saucepan or dutch oven and add enough water to cover. Add 1 tsp of salt and bring to a simmer over med-high heat. Reduce the heat and simmer uncovered, until potatoes are tender, about 9-12 min.
-Drain well, return the potatoes to the pot. Mash to desired consistency.
-Promptly add the green onion, parsley and garlic and combine. Then stir in sour cream, melted butter with 1 tsp salt. Season to taste with additional salt and fresh cracked pepper.
-Optional; drizzle top of potatoes with olive oil
-Serve!
