Breakfast Enchiladas

Ingredients
- Sauce:
- 1 lb ground sausage
- 2 Tbsp butter
- 4 green onions thinly sliced
- 2 Tbsp cilantro
- 14 eggs
- 3/4 tsp salt
- 1/2 tsp pepper
- 8 flour tortillas
- 1 C monterey jack chz
- 1/3 C butter
- 1/3 C flour
- 2 C shredded chz
- 1 can chopped green chilis
- 3/4 tsp salt

Step 1
Brown sausage and put in paper towel.
Make sauce by melting butter in pot then adding flour and stirring til smooth and hot. Then add rest of sauce ingredients.
Melt butter in fry pan and saute onions and cilantro. Add thed 14 eggs to this and cook till egs settle. Fold eggs so large curds form. Dont stir too often. Fold into the eggs 1 1/2 cups chz sauce mixture and then also sausage.
Spray butter bottom of 9X13 pan.
Spoon sausage/egg mixture into 8 tortillas (one at a time) and fold. Set filled tortillas (seem side down) in greased pan.
Pour rest of sauce mixture over top of all and add shredded monterey jack chz.
Bake at 350 for 30 minutes.
