Ingredients
- 6 cups quick cooking oats
- 3/4 cup raw honey
- 1 tsp salt
- 1-1/2 tsp baking powder
- 6 eggs
- 2 cups milk (almond or coconut milk)
- 1-1/2 tsp vanilla extract – (almond extract is good too)
- 1 ripe banana, mashed + 1 stick melted OV butter
- [OR 2/3 coconut oil ]
- 1/2 cup coarsely chopped nuts – combine walnuts, almonds and pecans

Step 1
Preheat the oven to 400 degrees F (200 degrees C). Grease and flour a 9x13 inch baking pan.
In a large bowl, stir together the oats, brown sugar, salt and baking powder. In a separate medium bowl, stir together the eggs, milk, vanilla and canola oil.
Pour the wet ingredients into the dry ingredients, and stir until well blended. Spoon into the prepared baking pan, and spread evenly. Sprinkle walnuts over the top.
Bake for 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean.
** I add all the “liquid” ingredients together, including the banana and use by Braun immersion blender to mix it all up before adding it to the dry ingredients.
