- 1 1/2 tsp baking powder
- Dash of salt
- 1 Tbsp shortening, margarine or butter
- Shortening or oil for deep frying

Preparation
Step 1
**The secret to fluffy sopaipillas is heating the oil to the right temperature. This is best achieved on a gas stove or deep fryer that has an accurate temperature control.
In a bowl combine flour, baking powder and salt.
Cut in shortening until mixture resembles fine crumbs. Gradually add 1/3 cup warm water (110°F to 115°F), stirring with fork (dough will be crumbly).
On a lightly floured surface, knead dough for 3-5 minutes or until smooth.
Cover and let rest for 10 minutes.
Roll dough into a 12½ X 10 inch rectangle.
Using a fluted pastry wheel or knife, cut into 2½ inch squares (do not reroll or patch).
Fry squares, two or three at a time, in deep hot oil (425°F) about 30 seconds on each side or until golden.
Drain on paper towels.
Keep warm in a 300°F oven while frying remaining squares.
To serve:
Sprinkle with powdered sugar, agave, or chocolate sauce. Can serve with vanilla ice cream as well.
