Ingredients

  • 1 lb. ground beef
  • 1 lbs. dried pinto beans, soaked per
  • pkg directions, and rinsed
  • 2 large dried ancho chili peppers
  • 1 can (14.5 oz) Fire Roasted Diced
  • Tomatoes
  • 1 Medium Red Onion, diced
  • 1 Medium Red Bell Pepper, diced
  • 1 Poblano Pepper, seeded/diced
  • 2 Tbs Garlic, chopped
  • 2 Tbs Chipotle Chili Pepper in Adobo
  • Sauce, chopped
  • 1 Tbs Cumin
  • 2.5 Tbs Chili Powder
  • .5 Tbs Crushed Red Pepper
  • 1 Tbs Salt
  • 1/4 cup Worcestershire
  • 1/2 cup Catsup
  • 1 cup strong brewed coffee
  • 1/4 cup Cider Vinegar
  • 1/4 cup brown sugar

Preparation

Step 1

Soak ancho chili peppers in hot water X 15 minutes; drain and chopped. Add all ingredients in slow cooker. Cook on hi X 8-10 hrs. Depending on your cooker, it may take longer or shorter for the beans to soften. After 6 hrs, start checking every hour unless you have cooked these type beans before in your cooker.
