Salad, Spinach, Avacado and Strawberry Salad

Ingredients
- Poppy Seed Dressing
- 1 cup vegetable oil
- 1/2 cup sugar
- 1/3 cup sugar
- 1/3 cup cider vinegar
- 1 tablespoon poppy seeds
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1/4 teaspoon paprika
- Spinach and avocado salad
- 1 pound fresh spinach
- 1 purple onion, sliced
- 1 avocado, sliced lengthwise
- 1 pint strawberries, cut into quarters

Step 1
For the dressing, combine the oil, sugar, vinegar, poppy seeds, salt, dry mustard and paprika in a bowl and whisk to blend. Refrigerate, covered, until ready to use. Stir before using. Use within 1 week.
For the salad, lay the spinach, onion, avocado and strawberries on a salad plate. Pour the dressing over the salad and serve.
Yield 6 to 8 servings
