Sweet & Spicy Party Wings

Ingredients

  • 6 pounds chicken wings (about 24) tips discarded, and wings split
  • 4 cloves garlic, thinly sliced
  • 1/2 cup unsalted butter, melted
  • 1/2 cup honey
  • 1/4 cup bottled green hot pepper sauce
  • 3 tablespoons grated fresh ginger
  • 1 teaspoon kosher salt
  • 4 jalapeno peppers, seeded and chopped*

Preheat oven to 450 degrees F. Line two 15x10x1-inch baking pans with nonstick foil; set aside. Cut off and discard tips of chicken wings. Cut wings at joints to form about 48 pieces.

Bring a large pot of heavily salted water to boiling. Add chicken pieces and garlic. Simmer, uncovered, 8 minutes; drain. Pat chicken wing pieces dry with paper towels. Arrange pieces in prepared baking pans. Bake on separate oven racks for 30 minutes or until done (at least 170 degrees F), rearranging pans halfway through baking.

Meanwhile for sauce, in a small saucepan stir together butter, honey, hot pepper sauce, ginger, and kosher salt. Bring mixture to boiling. Reduce heat and simmer, uncovered, for 4 minutes or until sauce is slightly thickened, stirring occasionally.

To serve, place baked wings in a large serving bowl. Add honey sauce. Toss to coat. Sprinkle jalapenos on top. Serve immediately.
