- 1 cup grated cheese (use different cheeses for different dishes)
- 3 tablespoons butter
- 1 1/2 cup milk
- 3 tablespoons flour
- salt
- pepper

Step 1
place butter in a small saucepan and heat till melted then remove from heat to keep from burning.
mix in salt and pepper (to taste) and flour.
Slowly pour the milk into the saucepan and return to medium heat, stirring constantly until thickened.
add cheese. you can use any flavor cheese you prefer, so pair your cheese well for different dishes. spicy cheeses like pepper jack work well with chips or veggies, while traditional cheeses like cheddar and mozzarella go well with pasta and potatoes.
