Mushrooms Marinated

Ingredients

  • 2 lbs. button mushrooms
  • 2 stalks celery sliced
  • 1 red pepper diced
  • 1 green pepper diced
  • 1 tablespoon minced garlic
  • 1/4 cup red wine vinegar
  • 1/4 cup lemon juice
  • olive oil as needed
  • 4 bay leaves
  • 2 tablespoons tarragon
  • 1 tablespoon crushed red pepper
  • salt and pepper to taste

Preparation

Step 1

In a large sauce pan of boiling water, add bay leaves, tarragon, crushed red pepper and cook for 5 minutes. Add mushrooms. Bring water to a boil and cook for 3 minutes. Drain and transfer mushrooms to a bowl. Add remaining ingredients and pour the oil over mixture until covered. Mix. Add salt and pepper to taste and refrigerate for at least 4 hours. Serve over a bed of crisp lettuce.
