Shrimp Skewers Prosciutto Wrapped

Ingredients
- 4 shrimp (26 to 30 shrimp per pound)
- 1 ounce prociutto
- 3 ounces pineapple
- 2 ounces tropical slsa
- 2 tablespoons clarified butter
- 1 ounce finales greens
- 2 tablespoons chef's seasoning

Step 1
Method:
1. Peel and devein shrimp
2. Place in a bowl and cover with lightly salted water. Let rest over night.
3. Slice proscuitto on the hobart slicer (Paper thin)
4. Carefully cut sliced prosciutto and wrap brined shrimp.
5. Place wrapped shrimp and cubed pineapple on a bamboo skewer following established procedure.
6. Store prepared skewers in a food grade container.
7. Carefully baste the skewer with clarified butter, season with chef's seasoning, and grill until just done.

Chef's seasoning is a blend of salt, granulated garlic, granulated onion, ground black pepper, ground white pepper and celery salt.
