Ingredients
- 1 Tbsp. oil
- 12 oz andouille sausage
- 1 lb shrimp
- 1 lb chicken, 1 inch chunks
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- 1 cup celery, chopped
- 1 Tbsp garlic, chopped
- 1 tsp thyme
- 1 Tbsp cajun seasoning
- 1/2 tsp. salt
- 2 cups diced tomatoes
- 1 tsp. Worcestershire sauce
- 2 cups chicken stock
- 2 bay leaves
- 1 1/2 cups long grain rice or riced cauliflower
Preparation
Step 1
Hit Saute
Cook sausage for 6 min. remove
Cook chicken for 5 min. remove
Cook onions, pepper, celery, garlic until tender
Add thyme, cajun, salt and rice.
Stir well
Add tomato, Worcestershire, chicken stock
Add chicken and sausage
Cook manual for 7 minutes, quick release
Add shrimp
Close instant pot for 10 minutes.
