Crockpot Herbed Artichoke Chicken

Ingredients

  • 1 1/2 pounds chicken breasts -- boned and skinned
  • 14 ounces diced tomatoes -- drained
  • 14 ounces artichoke hearts in water -- drained
  • 1 small onion -- chopped
  • 1/2 cup kalamata olive -- pitted and sliced
  • 1 cup chicken broth
  • 1/4 cup white wine
  • 3 tablespoons quick cooking tapioca
  • 2 teaspoons curry powder
  • 1 tablespoon fresh Italian parsley (or 1 teaspoon dried parsley flakes) -- chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation

Step 1

Combine all ingredients in crockpot. Mix well. Cover and cook on Low 6 to 8 hours or High 3 1/2 to 4 hours
