GREEN RICE

Ingredients
- 2 tablespoons finely chopped onion
- 1/4 teaspoon minced garlic
- 2 tablespoons butter
- 1/2 cup shredded Cheddar cheese
- 2 cups cooked rice
- 1/2 cup finely chopped parsley
- 2 eggs
- 11/4 cups milk
- 1 teaspoon salt

Preparation
Step 1
Saute onion and garlic in butter in skillet over low heat for 4 minutes. Add cheese, rice and parsley; mix well. Spoon into greased baking dish. Blend eggs, milk and salt in small bowl. Pour over rice. Place baking dish in pan of water in oven. Bake at 350 degrees for 40 minutes. Yield: 6 servings.
