Ingredients
- 2 lbs russet or yukon gold potatoes, whole
- 1/2 cup cooking liquid, reserved
- 1/4 cup olive oil
- 2 tsp basil, chopped
- 2 tsp tarragon, chopped
- 2 tsp parsley, chopped
Preparation
Step 1
Cover potatoes with cold salted water; simmer 45 minutes. Drain, peel and mash with cooking liquid. Add remaining ingredients; mash until smooth and fluffy.
