  • 6 Slices Bacon
  • 1 1/2 Cups Onion, Chopped
  • 1 1/4 Cups Barbecue Sauce
  • 3/4 Cup Dark Ale
  • 1/4 Cup Light Molasses
  • 3 Tbsp Dijon Mustard
  • 3 Tbsp Brown Sugar
  • 2 Tbsp Worcestershire
  • 1 Tbsp Soy Sauce
  • 4 Tsp Chipotle Chilies (*), Minced
  • 6 Cans Great Northern Beans (15 Oz), Drained
  • Garnish Fresh Parsley, Chopped

Note: Serve these hot or at room temperature.

Preheat oven to 350°F. Cook bacon in a large skillet over medium heat until crisp. Transfer to paper towels and drain. Transfer 2 1/2 tbsp of the bacon grease to a large bowl. Finely chop the bacon and add to the bowl. Add onion, barbecue sauce, beer, molasses, mustard, Worcestershire and soy and whisk to blend. Whisk in the chilies (add more or less to taste) and stir in the beans. Transfer the bean mixture to a 13x9x2 inch glass baking dish. Bake uncovered until liquid bubbles and thickens slightly, about 1 hour. Cool for 10 minutes, sprinkle with parsley and serve.
* Chipotle chilies, canned in a spicy tomato sauce sometimes called adobo, are available at Latin American markets and some supermarkets.
