Ingredients

  • 1 Head Romaine Lettuce, Finely Chopped
  • 4 Plum Tomatoes, Finely Chopped
  • 1 Green Bell Pepper, Seeded & Diced
  • 1 Cup Salami, Diced
  • 1 Cup Mozzarella, Diced
  • 1 Cup Smoked Turkey Breast, Diced
  • 1 Cup Garbanzo Beans, Drained
  • 1/2 Cup Scallions, Thinly Sliced
  • ----- Dressing -----
  • 1/2 Cup Red Wine Vinegar
  • 2 Tbsp Lemon Juice, Freshly Squeezed
  • 1 Tbsp Dijon Mustard
  • 3 Cloves Garlic, Minced
  • 2 Tsp Oregano, Dried
  • 1 Tsp Black Pepper, Freshly Ground
  • 1/2 Tsp Salt
  • 1/2 Tsp Sugar
  • 1 Cup Olive Oil

Preparation

Step 1

DRESSING: Place the vinegar, lemon juice, mustard, garlic, oregano, pepper, salt and sugar in a blender or food processor and blend for 30 seconds. Slowly drizzle in the oil, blending until emulsified. SALAD: Combine the salad ingredients in a large bowl and toss to mix. Pour the dressing over and toss again to distribute evenly. Serve immediately.
