Ingredients

- 1 Head Romaine Lettuce, Finely Chopped
- 4 Plum Tomatoes, Finely Chopped
- 1 Green Bell Pepper, Seeded & Diced
- 1 Cup Salami, Diced
- 1 Cup Mozzarella, Diced
- 1 Cup Smoked Turkey Breast, Diced
- 1 Cup Garbanzo Beans, Drained
- 1/2 Cup Scallions, Thinly Sliced
- ----- Dressing -----
- 1/2 Cup Red Wine Vinegar
- 2 Tbsp Lemon Juice, Freshly Squeezed
- 1 Tbsp Dijon Mustard
- 3 Cloves Garlic, Minced
- 2 Tsp Oregano, Dried
- 1 Tsp Black Pepper, Freshly Ground
- 1/2 Tsp Salt
- 1/2 Tsp Sugar
- 1 Cup Olive Oil
Preparation
Step 1
DRESSING: Place the vinegar, lemon juice, mustard, garlic, oregano, pepper, salt and sugar in a blender or food processor and blend for 30 seconds. Slowly drizzle in the oil, blending until emulsified. SALAD: Combine the salad ingredients in a large bowl and toss to mix. Pour the dressing over and toss again to distribute evenly. Serve immediately.
